Not for PS5 exclusives, you don't. But if they make more progress, you will be able to play them on PC.

I had been using the ps3 and xbox 360 emulator a bunch in the past year or so. I was basically using it to play only the games that were never released off those consoles which was a handful of games. I kept wondering are there people who are playing other games on these emulators that can be played better elsewhere? I loved being able to play all the exclusives or games just not released anywhere else.

I think the usecase is mostly for those. I e.g. used emulators to be able to play Bayonetta 2 and 3. And most console generations have some nice stuff, some I'm happy to be able to play those eventually.

Besides Dark Souls and Gran Turismo name a Sony ps5 “exclusive” that didn’t come to the ps5 up to this year ?

You mean PC? I mean, Sony used to have a policy to eventually port games, which they recently publically reversed, so I'm sure there's more stuff this'll be relevant for forthcoming.
